Season and brown ground beef and onions. Drain the fat.
Once the onions are clear, add the rice, cabbage, tomato sauce, 2 cups of water (or use cans of tomato sauce) and diced tomatoes. stir.
Let it come to a boil, then reduce the heat to medium and cover to simmer for about 20-30 minutes or until the rice is done and the cabbage is soft. Don’t lift the lid for another 20 minutes to make sure the rice cooks through.
Once cooked, top with cheese and cover with a lid to melt for a few minutes.
