Potato salad

Directions

Place potatoes and 1/2 tsp. salt in a pot with water. Bring to a boil and cook until tender. Let cool, peel and cube.
Mix mustard, remaining salt, lemon juice, pepper, mayonnaise, yogurt and parsley.
Mix the sauce in the potatoes with red bell pepper and onion.
Sprinkle with eggs and serve as a side dish.

Tips

To soften the strong flavor of the raw onion, cover with boiling water and let sit for a few minutes. Drain well and use as above.
If fresh chives are available, add 2 tablespoons of chopped chives to the sauce.
